We waited extra time in between our drinks while he warmed up the people all around us. Doesn't typically bother me unless I notice you're extra friendly with all of your other clientele. Our bartender really seemed disinterested in conversing with us outside of taking our order. The varying level of service from wait staff seems to depend heavily on your status quo and you risk receiving subpar service if you're not of the desired class and look which I really thought we could be over by now. Overall, our drinks and food were very good, not phenomenal. Expect to pay a hefty amount with the name Ritz-Carlton attached. ***Don't make the same mistake and expect discounted Happy Hour prices. Think of it like a wonton dessert with a pleasant apple taste and yummy Caramel goodness to dredge your bites in. *Apple Cheesecake Lumpia ($14): Lemongrass / Caramel. I would have like to have enjoyed the dish presented as a typical layout, laid out on a flat plate with the Dynamite sauce then poured over so to not make the sushi a messy, hot soup. Very unappetizing and the texture of the rice was that of rice pudding. The tight container of the bowl left the sushi like a hot soupy sushi. The flavors were very complimentary but I didn't understand as to why the sushi was presented in a small bowl. *Dynamite Roll ($30): 1/2 California Roll / Scallop/ Shrimp/ Tobiko/ Dynamite sauce. Fish again wonderful quality and a super Roll. *Spicy Tuna and Hamachi Roll ($34): Jallepeno/ Scallion/ Micro Greens. Excellent quality of fish and generous amounts of Avacado. *Rainbow Roll ($34): Tuna/ Hamachi/ Salmon/ Shrimp / Crab /Tobiko / Avacado. Thus was our last night on the beautiful island and we decided to splurged bit. If you're searching for the same thing, look elsewhere. The level of hands on service, vantage view of cocktail artists at their finest and conversing with others makes this the fun seat in the house. My favorite seat is typically at the bar. So, in my opinion, this place is really only good for HH and/or if you can just stick to starters. They could have/should have said the second cocktail I had while waiting was ‘on the house’ but didn’t. It was served as other were having dessert. They redid a new rare filet but it took much too long. You have to question ability when a even a steak’s serving temperature cannot be executed properly! The cut seemed of good quality but again, lacked flavor - the complete opposite of the filet we experienced the night before at Merriman’s. The rare came medium rare and the other medium. One ordered medium rare and the other rare. The Bad: the women ordered ‘Fish of the Moment’ (opaka opaka) was cooked nicely but lacked flavor (salt?). The starters were outstanding (we tried the octopus, hamachi, lobster Mac ‘n cheese and Caesar salad). The gentleman playing guitar and singing Hawaiian songs was perfect. The Good: our server Ricky was very friendly and attentive. We were a party of four (two couples) and did the $99 pp 2 course prix fixe, no bread service.
